Roasting Nuts
Roasting nuts really brings out the flavour and creates a great crunchy texture.
To oven roast or grill nuts first spread them out onto a baking tray. Roast in the oven or under the grill for around 6-7 minutes or until golden brown. The nuts should start to give off a strong nutty smell. Shake them occasionally to ensure both sides are roasted. Remove from the oven and leave to cool.
To dry roast nuts, place them into a non-stick frying pan, with no fat. Roast over a gentle flame until golden brown and fragrant. Stir constantly and watch carefully: nuts can scorch easily.
