Blackcurrant Sorbet

Ingredients

  • 500g/5 cups blackcurrants, trimmed
  • 350ml/1 1/2 cups water
  • 150g/3/4 cup caster sugar
  • 1 egg white

Method

Step 1

Put the blackcurrants in a pan and add 150ml/2/3 cup of measured water. Cover the pan and simmer for 5 minutes or until the fruit is soft. Cool slightly, then puree in a food processor or blender.

Step 2

Set a large sieve over a bowl, pour the puree into the sieve then press it through the mesh with the back of a wooden spoon into the bowl.

Step 3

Pour the remaining measured water into a clean pan. Add the sugar and bring to the boil, stirring until the sugar has disolved. Pour the syrup into a bowl. Cool, then chill. Mix the blackcurrant puree and sugar syrup together.

Step 4

Churn in an ice cream machine until thick. Add the egg white and continue churning until it is firm enough to scoop.
