Chicken Satay Skewers with Peanut Sauce

Ingredients
- 2 tbsp vegetable oil
- 1tbsp sesame oil
- 1/2 lime (juiced)
- 2 chicken breasts (diced)
- For the Sauce
- 2 tbsp groundnut oil
- 1 onion (chopped)
- 1 green chilli (deseeded and chopped)
- 1 garlic clove (crushed)
- 125ml crunchy peanut butter
- 6-8 tbsp water
- 1/2 lime (juiced)
Method
Step 1
Combine the oils and lime juice in bowl and add the diced chicken breast. Cover and leave to marinade for 1 hour.
Step 2
To make the sauce, heat the oil in a frying pan and saute the onion, chilli and the garlic over a low heat for 5 mins until softened .
Step 3
Add the peanut butter, water and lime juice and simmer gently, stirring occasionally until the peanut butter has thinned out.
Step 4
Drain the chicken from the marinade and thread the pieces onto wooden skewers (soak the skewers in water for 30 mins before threading the meat to prevent burning during cooking).
Step 5
Either grill or BBQ the skewers, turning frequently for about 10-12 mins until the chicken is cooked. Serve hot with the warm dip.
