This easy chocolate doughnut recipe only takes around 30 minutes to make. The rich chocolatey frosting is lusciously thick and smooth while the doughnut it tender yet chewy. This recipe produces around 15 rings.
- 500g / 16 oz self raising flour
- 2 eggs, beaten
- 2 tsp vanilla essence
- 90g / 3 oz caster sugar
- 2 tbsp unsalted butter, melted
- 200ml / 7fl oz whole milk
- 1 tsp baking powder
- For the Icing
- 100g / 4 oz dark chocolate, chopped
- 225 g / 8 oz icing sugar, sieved
- 65ml milk
Sift the self raising flour and baking powder into a mixing bowl and stir in the sugar. In another bowl whisk the eggs, vanilla essence and melted butter together and add the milk. Slowly pour over the dry mixture and mix well until you form a dough.
Roll out the dough with a rolling pin to about 1 inch thick. Dust your cutters with flour and cut out the rounds of dough. Use a smaller cutter for the middle to make the rings.
Heat some sunflower oil in a deep fat fryer or wok to about 182°C (360°F). Fry the doughnuts for 2-3 minutes on each side until golden brown. Drain and leave to cool.
To make the icing, melt the chocolate and milk together in a saucepan over a medium heat. Add the icing sugar and mix well to form a thick chocolate paste. Spread the icing over cooled doughnut rings and leave to set.
