Frozen Summer Berries with Hot White Chocolate Sauce2012-07-05

- 12 large strawberries
- 50g fresh raspberries
- 50g fresh blueberries
- 350g white chocolate (chopped)
- 600ml double cream
- 1 vanilla pod (deseeded)
- 1 sprig fresh mint
Place the strawberries, raspberries and blueberries onto a tray and freeze overnight. In a saucepan add the cream and vanilla pod and bring to the boil.
Add the chopped white chocolate gradually and whisk well until smooth. Remove the berries from the freezer and leave at room temperature for 10-12 mins.
Transfer berries into individual bowls or martini glasses and pour over the hot white chocolate sauce. Serve with a sprig of mint and a dust of icing sugar.
