Hot and Sour Soup

Ingredients
- 6 dried shiitake mushrooms
- 115g rice vermicelli noodles
- 4 green chillies (deseeded and chopped)
- 6 tbsp rice wine vinegar
- 850ml vegetable stock
- 2 lemon grass stalks
- 115g canned water chestnuts (drained)
- 6 tbsp soy sauce
- 1 lime (juiced)
- 1tbsp soft brown sugar
- 3 spring onions (chopped)
- handful of raw bean sprouts
Method
Step 1
Place the dried mushrooms in a bowl and pour over some hot water. Leave to soak for 1 hour. Place the noodles in another bowl and pour in enough hot water to cover. Leave to soak for 10 mins.
Step 2
Combine the chillies and rice wine vinegar in a separate bowl and set aside. Drain the mushrooms and noodles. Bring the stock to the boil in a saucepan. Add the mushrooms, noodles, lemon grass, water chestnuts, soy sauce, lime juice and sugar. Cover and bring to the boil.
Step 3
Stir in the chilli and vinegar and cook for 2-3 mins. Remove the lemon grass and serve in small bowls garnished with some fresh chopped spring onions and a handful of raw bean sprouts.
