A Mediterranean couscous recipe using feta cheese, thyme, lemon juice and fresh cherry tomatoes. I love making couscous because you can knock it up in minutes and it goes with almost anything. I would have to say that this is my favourite couscous recipe probably because I love feta cheese and thyme. Give this a try at home and see how you get on, it makes an amazing salad if you’re having guests round. If you want to try something a little different, have a look at my Moroccan couscous for a more Middle-Eastern flavour.
- 225g/8oz couscous
- 1 bunch fresh thyme, chopped
- 1 bunch fresh coriander, chopped
- 150g/5oz cherry tomatoes, sliced
- 1 lemon, zest and juice
- 100g/4oz feta cheese, diced
- 4 tbsp olive oil
- 1 tsp turmeric powder
- 1 red onion, very finely chopped
- salt and freshly ground black pepper
Boil twice the volume of water to the couscous with the turmeric and pour over. Cover and leave to soak for 10 minutes. The turmeric gives it a nice yellow colour. Remove the cover and fluff the couscous using the back of a fork. Add the olive oil to help loosen.
Mix in the chopped herbs, tomatoes, red onion, feta and lemon zest and juice. Leave to stand for 15-20 minutes to allow the flavours to infuse.
Season with salt and black pepper and serve at room temperature.
