Moroccan Couscous

Ingredients
- 1 sweet potato, chopped
- 1 courgette, sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 150ml water
- 20g chickpeas
- 2 red or yellow bell peppers
- 1 tsp cumin
- 1 ground allspice
- 1 tsp ginger
- 1 tsp paprika
- dash cayenne pepper
- dash cinnamon
- 1 tsp nutmeg
- 1 tsp salt
- 250g couscous, uncooked
- 30g dried apricots
- 30g pine nuts (optional)
- 50g raisins
Method
Step 1
Mix all dry ingredients together in medium bowl. Sauté the sweet potato, courgette and garlic in olive oil until just barely tender for about 3 minutes. Add peppers and cook for another 3 minutes.
Step 2
Add chickpeas, water and dry ingredients. Cover and allow to simmer for another 5 minutes, stirring occasionally. In a large saucepan or mixing bowl add the couscous and pour over the boiling water. Cover with cling film and leave for 10 mins until couscous becomes light and fluffy when mixed.
Step 3
Add the raisins and apricots and mix with a fork to break up the couscous. Serve either hot or cold.
