Red Berry Sorbet

Ingredients
- 150g/3/4 cup caster sugar
- 200ml/1 cup water
- 500g/5 cups mixed berries (strawberries, raspberries)
- juice of 1/2 lemon
- 1 egg white
Method
Step 1
Put the sugar and water into a pan and bring to the boil, stirring until the sugar had dissolved. Pour the syrup into a bowl, leave to cool, then chill.
Step 2
Puree the fruits in a food processor or blender, then press through a sieve into a large bowl. Stir in the syrup and lemon juice.
Step 3
Churn in an ice cream maker until thick, then add the whisked edd white. Continue to churn until firm enough to scoop.
Step 4
Scoop on to plates or bowls, and decorate with fresh strawberries, leaves and flowers.
