Salted Almonds

Almonds treated in this manner have a beguiling, almost wicked taste, which captures people instantly.
Ingredients
- 1kg shelled almonds
- 55g citric acid
- 150ml cold water
- 25g salt
Method
Step 1
Spread the already shelled almonds in a flat, large container, like an oven dish. Mix the citric acid with the water until completely diluted.
Step 2
Sprinkle the almonds all over with this liquid, stir them so they all get soaked in it, leave for 10 minutes and then strain in order to get rid of any excess liquid.
Step 3
Put them back in the container, spread and sprinkle them with half the salt. Shake the pan and sprinkle the rest of the salt. Put them in a pre-heated oven (350F/180C) for 30 minutes, stirring them twice, at least, until they are turning nicely brown and crisp. Let them cool before you store them in jars.
